FRUGAL KITCHEN FAVES: BORSCHT for those PESKY TIMES OF NO MONEY
THIS IS a receipe for a great and FRUGAL SOUP! Impressive, lusty red home-cooked, easy to make and youthening ---as beets make our blood thicker, are great for anemia, prevent aging. Give a nice color to the face and palms of the hand. AND they help our glycemic index, banning diabetes. So before you finish reading, run out and buy some beet seeds so you can grow them next Spring, or Autumn in my L.A. Calif area, start early. Just go buy a bunch of beets. That will take twenty minutes to do. And then following these easy recipes for borscht will make for many nights' worth of pancreas regulation delicious soup.
Luckily, beets keep so you can make one pot now, another a week from now.Take your protein which can be a porkchop w. all visible fat cut off or a hunk of pork shoulder, or beef, or chicken but if you insist on being vegan, leave that part out. Just potatoes. Simmer beans even, add your bulky protein to 1 large beet, cut in pieces, carrots, chunks of potato, an onion, a clove or two or three of garlic, a milder Anaheim or Puebla chile. Simmer with the right amt of your home made seasoning salt. (You put everything in cupboard into the salt, thyme, sage, tumeric, garlic powder and store in saltshakers or in a tea tin.) Simmer until all are soft. Add fresh green spinach, cilantro and the corn from one ear, cut off with a sharp knife. If vegan, add tofu chunks or beans at the end. Simmer a minute more. Add a little dash or two of sesame oil (the toasted sesame oil that orientals use) and some soy sauce to bring it up to the level of richness and saltiness that you enjoy. And if you love that really opulent touch of SOUR CREAM on top, drop a big glob front and center! Dieters might use yogurt with garlic, dill, seasoning salt in it.
