ENCHILADAS - While heating tortillas on flame, rub butter cube once lightly against the surface. fill with any protein you like, mashed beans/corn/ cheese/ leftover meats.
Open half price can of enchilada sauce that you got off the market's bent shelf, (Or salsa verde below) throw on bottom of pyrex dish, roll the enchiladas in it, cut some cheese on top, put in toaster oven.
ENCHILADA VERDE- Half pound tomatillos get peeled, cut, simmered, blended then dropped in hot oil/chile & onion fry pan. Simmer 2 min, chopped cilantro on top. Pour over enchiladas, add sour cream, grated cheese, bake 2 min in toaster oven.
QUESADILLAS - Heat tortillas on flame, both sides, put a finger of any cheese inside. (tiny onion pieces optional. Ditto a purloined TACO SHOP envelope of hot sauce.) Lay in skillet, put on low flame for 2 minutes, covered. Good with salsa verde inside with the cheese.
REFRIED BEANS- Fry onion, garlic, chile pepper lightly. Open can beans, any kind, drain beans, throw beans into hot oil, mash. Add the bean liquid in slow increments. Beans should not be sloppy, should stay in a mass. Cover with chopped cheese pieces, put lid on, turn off fire. let sit 5 min til cheese is soft.
CHILE RELLENOS - NOT QUICK. Whole Anaheim chiles get flame-singed, turning as you blacken skin. Then paper-bagged, steamed, then bag opened, peeled & gutted. Fill thru a single slit wi. protein mix, nuts, meat, cheese. Tofu mixture. Dredge outsides in flour, so egg batter sticks. Drop into egg batter (WHIP EGG WHITES til stiff, add yolks, season.) And fry. Set in fresh made tomato sauce in skillet,turn once.
BERDOLAGAS - Half pound purslane, washed, picked over, root ends of stems get cut off; this mass cooks down to nothing when simmered 2 min. Shake to rid liquid then drop Into red tomato sauce. Whipped eggs can go in too, cook 1 more minute. Serve with hot tortillas
