THE CURIOUS CASE OF THE  TEFLON CARROT!
A GOOD CARROT is HARD TO FIND THESE DAYS
OR DO YOU SIMPLY FIND THEM HARD, PERIOD?
carrots are tasteless these days and
                            HARD
WONDER WHY SHE GAVE THEM ALL TO ME?

I have made many soups in these last, brisk days of autumn and no matter how many
hours I simmered the carrots, they were hard as rocks. And I remember it
wasn't that way, last year!

This is some new breed. Probably named IMPERVIA instead of IMPERATOR.

I've been on the planet a while. Try a half century and then 18 years...
Carrots cooperated in the old days; they got soft when you cooked them for
an hour. I'm guessing the 'new carrot' has one more talent. It is rot
proof. It can lie around in groceries, in warehouses and never a nick or
dent. So it joins WHITE FLOUR in being the perfect item to lie around for
years and stay the way the machine made it.

Hard Carrots are great if you need fender material for your S.U.V. Or
Carrot teflon for military vests, but not if you want a pleasant SOUP!

Anyone else notice this? What to do? See, I hate to trek 5 miles to WHOLE FOODS
to buy organic carrots at four times the price. On sale I get carrots at
33c an lb, pick the bags that weigh heaviest in the hand, so I really pay
much less. 25c an lb maybe.

WHOLE FOODS? Anyone know the price now? 2$ or something? 8 x the cost?

I guess I have to create a really good garden bed, deep humus soil and grow
these suckers year round.

I live in an alkaline clay area of california. so that ain't gonna happen soon.
Sigh.

I know. I can grate the carrots into the finished soup so it'll look like
garbage, like I dropped an old grated carrot and raisin salad in the soup.
Other suggestions?

Not only grow them, steam them. 20 minutes with salt, pepper, garlic, honey, olive oil and onions.

I have to put a DISH inside my steamer to do that as steamer has HOLES in it.
 That's my recipe.

So I send that out to my list of cooks and gardeners and get this back!

Have I noticed carrots being cook proof? YES! Carrots placed in the cavity and pan of the turkey last week were not soft after all that time in the oven! Even the ones that soaked in the pan drippings. I even boiled the carcass into a broth, and the carrots were STILL NOT soft. Softer, sure. Usually after all that time they dissolve, at least in the broth.  Ya think they're foolin' with the genetics of carrots? Naah....not our fine agri-biz boys...RIGHT?

Home grown are the sweetest and most tender, the expensive organics a good second choice. The other kind...forget 'em,at least for culinary uses!  DAVE
