FIRST PRIZE EGG SALAD (and VEGAN VERSION TOO)


l0 hard cooked eggs, chopped

3 ribs celery dice (1/2 onion minced either on side or in eggs, optional)

4 scallions w 2” greens left on, thinly sliced

2 tsps finely minced jalapeno pepper

l tsp finely minced garlic

½ cup finely diced red bell pepper

l cup coarsely grated cheddar cheese

l cup mayo (you can make your own easy)

l tbsp fresh lime juice

2 teaspons ground cumin

2 tsps freshly ground black pepper l tbsp chopped flat leaf parsley black pitted olives for garnish.

ASSEMBLE INGREDIENTS IN A BOWL, stirring. Serve on a plate in a bed of lettuce. Sprinkle the egg part with paprika, garnish with parsley around it, but with olives and avocado slices on top. Toast some slices of whole sprouted grain (non acidic BIBLE BREAD…as all FLOUR bread is acid reaction) Werve 2 pc, hot, to each guest. Let everyone build his own sandwich and encourage them to add the lettuce! A small bowl of minced onions should be avail for those who like these in their egg salad. (CHECK CAREFULLY to make certain no pits in olives. ) 

HOME WHIPPED FRESH MAYONNAISE

3 pasteurized egg yolks, 2 tablespoons lemon juice, 1 teaspoon honey, 1 teaspoon dry mustard 1/2 teaspoon salt pinch ground black pepper 1 cup olive oil. 

STIR ALL INGRED except OIL together with the steel whip, then someone else pours oil in slowly steadily a teaspoon a second but in a steady flow while you use whip to make an emulsion. Fridge til ready to use. 

VEGAN VERSION

Same replice, just replace eggs w. tofu crumbles/ chunks, and add chile sesame oil, curry powder or tumeric, toasted sesame seeds, or HOME MADE sesame GOMASIO RECIPE ONLINE at THIS SITE:
