RECIPES FOR EASY SUMMER DELICACIES

the MAGICAL APRICOT.
                    BEST FRUIT NATURE INVENTEDAPRICOT JAM- I am an apricot cynic. ALL SUPER MARKETS sell mealy apricots. A turnoff. But you can get fully ripe, juicy fruit totally  FREE as you can easily plant two trees (some varieties need pollenizers,) in your garden. They bear young, so if you buy a 6' tall tree, bareroot, l9$ at HOME DEPOT, what with Apricots seeming to enter their fertile TEENS early, you're in deep jam soon enough.. TAKE a lot of pitted apricots, say four to ten cups. Add almost an equal amt. Of cane Sugar. I’m always trying to lowball the sugar. Two parts fruit one part sugar. Just eyeball the amt, no need to mash the cots.

Take one lemon for every 2 jars of jam, using a sharp paring knife, skin off the rind, yellow outer stuff, not white. I use a carrot paring tool. Little white’s ok. Or user a GRATER and just grate the yellow rind off. Add rind to fruit that’s in pan. Add Juice (what’s left of the lemon, picking out seeds) Add that lemon juice to jam at end of its simmering period. I use a quart of apricots and rind/juice of 4 lemons. Seeds go to compost pile in case I get lemon trees. Citrus is true to parent, unlike peaches. APRICOT is true to parent too, so plant all your seeds at pal’s homes. Some varieties are not self pollinating and you or they will have to seek a mate at the store, or graft pollenizer varieties as small stubby branches on to the tree.

Heat on med. Flame, use a steel masher occasionally to get apricots to give up their shape. Add a tbsp of pectin. I have my jars pre boiled, to sterilize them, and then drained. I put the jam in, put lids on but I don’t sterilize really, I cool jam then put in freezer. Thanks giving when you pull this out, people will prefer it to cranberry sauce. But if you make your cranberry sauce with lots of lemon rind and lemon juice, maybe not!

APRICOT-ADE  - Most delicious, refreshing beverage. Recipe came from CHICO a famous organic gardener in LA in sixties. CHICO’s ORGANIC GARDENING AND NATURAL LIVING is a superb book of organic gardening tips available at bibliofind.com and abebooks.com for a buck or two used. It was written by son of Irving Wallace, David Wallechinsky. The beverage Chico describes so lovingly is from ITALY, full of healing laetrile, as it’s made from insides of those apricot pits. This will prevent Cancer. Italians drink this all summer just cuz they like it. METHOD: Get HAMMER. Hit ten apricot pits or stones on a cement surface NOT on floor tiles. Get the almond out. Discard chipped outer hulls cuz if you step on that in bare feet! OUCH!

Throw those ten seeds into blender, grind with a pitcher of ice water, and use some apricot syrup from your jam making as sweetener. Keep on ice. Serve cold w. Mint leaves.

Apricot pie. Create a creamed cheese paste with an egg, cream cheese, sugar, stir well, and flavor it with almond essence. You can even add marzipan almonds, easy to do, homemade. Blanche  in H20 overnight, peel, dry in fridge, toast. The almond cheese mixture goes at the bottom layer inside the pie with your average pie filling made of apricots, sugar, thickened by tapioca and by cooking, this goes on top. Toasted blanched almonds will go on top of the pie to sell the point that this is ALMOND THEME APRICOTS!

NOTE: Apricots grow easily from seeds, and are  true to the parent. Problem is, some parents are sterile like mules. Need pollenizer varieties nearby. You will get a fine scion from a seed. In autumn, take a bag of seeds, wrapped in peat moss, dampen peat moss and keep it in fridge three months to ‘stratify it’. Or put seeds in a pot with some soil on them, leave outdoors. You want about 40 degrees for entire winter. Plant individually in spring. Find apricots from various markets, hoping to get a pollenizer variety into your orchard.
